Olive oils

Our operation consists of more than 10,000 olive trees, all of which are traditional varieties. The characteristic of our mill is that we produce our oils as single varieties and manufacture a combination oil as a special vintage.
 
Our range of oils :
     - Grossane oil : Grossane oil is neither bitter nor sharp and has very buttery aromas with delicate almond hints and a subtle, well proportioned fruitiness.
 
     - Salonenque oil : Salonenque olive oil is very much distinguished by its creaminess in the mouth along with its fresh almond aromas.
 
     - Bouteillan oil :

     - Verdale oil : the Verdale des Bouches du Rhône oil has a very light fruitiness and releases herby aromas with hints of green apple.
 
     - Aglandau oil : Aglandau olive oil is very fluid in the mouth and releases a fruitiness which is distinguished by aromas of cooked artichoke or freshly cut herbs. It is also characterised by a medium intensity sharpness.
 
     - Picholine oil : the Picholine oil is very sharp at the back of the throat and very intense with obvious herby aromas as well as a slight peppery note.
 
     - Combination oil : our combination oil which brings together 5 varieties is very complex from an aromatic point of view. We consider it at the mill as our 'vintage'. It releases different flavours at different stages as you taste it. Initially, you will be able to distinguish buttery almond flavours which develop into herby or cooked artichoke aromas, followed by a light sharpness which comes through at the end.
 
Packaging:
The olive oils come in 5 litre and 3 litre containers and 75cl and 50cl bottles. They can be kept for 18 months.
 
Recommendations for use:
All of our oils can be used straight from the bottle or they can be cooked with as their smoking point is 210°C.
Each one can be used with different dishes according to their flavours. Olive oils such as the Verdale, Aglandau and Picholine which have a longer lasting flavour should be used to drizzle. The Grossane, Salonenque and Combination oils are ideal for cooking with.
