Combination olive oil
Variety: The Grossane, Verdale, Aglandau, Salonenque and Picholine are all varieties local to the Alpilles region. The most common varieties in our village are the Salonenque, Aglandau and Grossane. The Picholine accounts for around 5% of plantations in our region whereas the Verdale des Bouches du Rhône was very sparsely replanted following the hard frost of 1956.
Oil: Our combination oil which brings together 5 varieties is very complex from an aromatic point of view. The combination represents the mill’s ‘vintage’. It releases different flavours at different stages as you taste it. Initially, you will be able to distinguish buttery almond flavours which develop into herby or cooked artichoke aromas. You will finish with slightly sharper notes in the mouth.
Packaging: Our oils are available in different formats: - 50cl or 75cl glass bottle - 25cl metal canister - 3 litre or 5 litre plastic container
Uses: All of the Mill’s olive oils can be used straight from the bottle or whilst cooking. We recommend that you use the Combination olive oil in your salads, for drizzling into ratatouille dishes, gently browning onions, on pasta or rice, or even in puree dishes...
