Alpilles Skewer and rocket salad

• 8 cherry tomatoes,
• 8 dry Corsican goat plugs (see photo),
• 8 olive jam with ginger,
• 4 dried tomato halves,
• Arugula 250g,
• olive oil variety Aglandau,
• vinegar 10ml Espelette pepper,
• pinch of salt.


Preparation: wash the rocket, then drain. In a bowl, mix with olive oil variety Aglandau, chili Espelette vinegar and a pinch of salt. Thread onto wooden skewers : 1 cherry tomato, 1 dry goat cap, ¼ dried tomato and olive from olive jam with ginger. Fill transparent glasses of rocket salad and put a skewer above. Serve.
